Respect for our Earth, according to Jessica Prealpato’s philosophy, starts now more than ever with what we eat. Every product that is cultivated, harvested and prepared has its own important story, which needs to be told and reflected in the dish – in the best and most beautiful form. Jessica’s creations are evidence that she succeeds in a unique way: one could well imagine choosing the salad of green and white asparagus served with rhubarb and potato mousse. Followed by scones with dried hibiscus blossoms, raspberries and tarragon? To finish, possibly a pear and plum tart, finely garnished with toasted pine nuts and lemon zest...
